Delicious French macarons made at home. Although they are rated for the toughest cookies for preparing, today I will share with you a proven recipe to enjoy their taste.
- 3 egg whites
- 1/3 cup sugar
- 1 cup ground almonds (finely grounded so they look like flour)
- 1/3 cup powdered sugar
- 2 tablespoons espresso
How to make it:
* The size of the cup that will measure the ingredients is 100 ml.
In a bowl for whisking put the egg whites and start whisking. When you form initial foam slowly add the sugar and continue whisking with maximum speed (You should add the sugar gradually).
It is necessary to whisk about 7 minutes to get a firm whipped cream.
In the bowl through a sieve pour the powdered sugar, espresso and grounded almonds (This is very important step if you want to get a good cookies).
Now follows the step where most of the people go wrong.
In bowl with whisked egg whites add the almonds, espresso and the powdered sugar. Using a spatula stir mix the ingredients slowly, not allowing losing air in the mixture quickly. Check the mixture with a spatula, it should fall gradually… Like lava.
Now you can start making cookies in small circles. Very important step when you fill the pan (if you don’t do it you will not get the desired shape) is to hit the pan on the desk few times. This step helps pull the air out of the cookies, and also this fill form the crack on the cookie.
Let them to dry at room temperature for around 40 minutes (Sometimes the can stay up to 1 hour).
Preheat an oven to 140 degrees and bake 13-15 minutes.
- 120 g. butter at room temperature
- 120 g. powdered sugar
- Vanilla extract
Use your mixer to mix all the ingredients for about 7 minutes until you get a nice frothy mixture. Put the filling in cooking syringe and apply it one the cookie. Cover the filling with another cookie and get a sandwich cookie – macarons.
